茄子は本来アクが強く、生食には向かないのですが、水茄子はアクが少なく、生でも食べれます。
特に泉州絹皮水茄子は、皮が薄く、アクも少なく、りんごや梨の様な甘味を持っているのが特徴的です✨
何もつけずにそのまま食べても美味しいですが、自社農場で作っている小糸在来という大豆で作った生醤油で食べると、相性抜群です!

Eggplants have a strong bitter taste and are not suitable for eating raw, but mizunasu eggplants have little bitterness and can be eaten raw.
In particular, Senshu Kinepimizu eggplants are characterized by their thin skin, less harshness, and the sweetness of apples and pears.
You can eat it as it is without any dipping, but if you eat it with raw soy sauce made from soybeans called Koito Zairai made at our own farm, it goes perfectly with it!
